This is leg of lamb done right — naturally lean, expertly prepared and packed with flavour. Whether slow-roasted for Sunday lunch or butterflied and grilled over charcoal, it's a versatile joint that always delivers. Order before 11am Tuesday to Friday for next-day delivery across the UK. Cut fresh in-house, vacuum-packed and shipped in insulated packaging with ice packs.
Bring to room temperature for 1 hour. Score the skin and stud with garlic and rosemary. Season generously with sea salt. Roast at 220°C for 20 minutes, then reduce to 170°C — approximately 20 minutes per 500g for medium-pink. Rest for at least 20 minutes before carving. Use a thermometer: 60°C internal for pink, 70°C for medium-well.
Bring to room temperature. Marinate for at least 2 hours — olive oil, garlic, rosemary, lemon and salt works beautifully. Cook over medium-high coals — approximately 8-10 minutes per side for medium-pink on a 2kg butterflied leg. Rest for at least 10 minutes before slicing against the grain into thick pieces.
As a guide: 1.5kg serves 3-4 people, 2kg serves 4-5, 3kg serves 6-8. Because it's boned at the aitch, there's minimal waste — most of the weight is eating meat. The butterflied 2kg option also serves 4-5.
