Beef Marrow Bone – 1 split bone
Seasonal Herbs – 50g
The recipe below should yield 3-4 litres of broth. Simply roast the beef bones and mince with some vegetables (if desired) on a high heat. Once browned, add to a large pan with water — ensure there is at least 5cm of water above the top of the bones. Bring to the boil, then simmer or leave in a very low oven (85°C) for 12-24 hours. Job's a good'un.

Bone broth is rich in collagen, gelatin, glucosamine, chondroitin, and minerals including calcium, magnesium and phosphorus. These are released from the bones during the long, slow simmer. Regular consumption is associated with improved joint health, gut health, skin elasticity and immune function. It's also a highly bioavailable source of protein.
For a good broth, simmer for a minimum of 8 hours. For a deeply gelatinous, collagen-rich broth, go for 12-24 hours at a very low heat (85°C in the oven or the lowest setting on your hob). The longer you go, the more collagen is extracted. You'll know it's ready when it sets to a jelly when chilled.
Strain the broth through a fine sieve, allow to cool, then refrigerate for up to 5 days or freeze in portions for up to 6 months. The fat will solidify on the surface in the fridge — skim it off for a clearer broth or stir it back in for a richer one.
