Neal's Yard Dairy is widely considered the UK's finest cheesemonger — founded in 1979, they champion British and Irish farmhouse cheesemakers, visiting farms to select the finest batches of cheese which they then mature in their own cellars until peak deliciousness. Every cheese they sell is selected, matured and cut by hand. Working with Neal's Yard means working with the very best.
Colston Bassett Stilton (320g), Tunworth (250g) and Lincolnshire Poacher (250g) — total minimum weight 820g. The Stilton is the benchmark blue, made exclusively for Neal's Yard. The Tunworth is England's answer to Camembert. The Lincolnshire Poacher is a magnificent hard cheese with real complexity and depth.
Remove all cheeses from the fridge 45–60 minutes before serving to bring them to room temperature — this is essential for the flavours to open fully. Serve with Verduijn's Fine Biscuits, good chutney and seasonal accompaniments. Start with the lightest cheese (Tunworth) and work towards the strongest (Stilton).
Once delivered, keep refrigerated and consume within 3–5 days for optimum flavour. Wrap each cheese individually in wax paper or cheese paper rather than cling film, which can cause the cheeses to sweat and affects flavour. The Stilton will keep slightly longer than the soft cheeses.
