Nao Yamamoto began his blacksmithing career at the age of 18 under the legendary Asai Uchihamono workshop, known for the famous Echizen Marukatsu brand. Today, he produces knives in small quantities, combining traditional forging techniques with exceptional craftsmanship.

 

This 180mm Gyuto is an excellent all-purpose chef’s knife suitable for both professional chefs and passionate home cooks. The blade profile is versatile enough for slicing, chopping, and everyday food preparation while maintaining the precision expected from a handcrafted Japanese knife.

 

Made from White #2 Carbon Steel (Shirogami #2), this knife delivers outstanding sharpness and a crisp cutting feel that many chefs consider the benchmark of traditional Japanese carbon steel. It is easy to sharpen and capable of achieving an incredibly refined edge.
