The Shapton Kuromaku #5000 is my recommended finishing stone for anyone looking to take their sharpening beyond a basic working edge.
After sharpening on a #1000 stone, the #5000 refines the edge further, improving sharpness, smoothness, and overall cutting feel. The result is a cleaner, more effortless cut that is especially noticeable when slicing vegetables, proteins, and delicate ingredients.
Like all stones in the Kuromaku series, it is a Splash & Go whetstone. No soaking is required — simply add water and start sharpening.
One of the reasons I recommend Shapton stones is their durability and ability to stay flat longer than many traditional soaking stones. While I always recommend regular flattening regardless of the brand, the Kuromaku series is easy to maintain and provides consistent sharpening results.
The #5000 leaves a refined edge that is practical for everyday cooking. Rather than creating an overly polished edge, it produces a balanced finish that works beautifully on both Japanese and Western knives.
This is also one of the finishing stones I use when sharpening customers’ knives at Japanese Knife Garage.
