100% Bical sourced from a single, limestone-laden vineyard planted in the 80\'s • Grapes are fermented on the skins with the addition of chestnut flowers (Flos Castanea means Chestnut Flower in Latin) for 2 weeks in open-top lagar until fermentation is complete • Solids are then pressed and aged in a combination of large neutral barrels (pipas) and some amphorae for a year or until naturally stable • The use of chestnut flowers as a sole preservative is inspired by a practice pioneered by the grandfather of Portuguese biodynamics, Fernando Paiva.
