The Waterford Sheestown Edition 1.1 is a distinctly Single Farm Origin bottling and perfectly captures what Waterford stands for: transparency, terroir, and precision. The barley for this whisky comes from Sheestown Farm , harvested in 2016 , and was distilled and matured separately to maximize the influence of soil and microclimate.
After four years of maturation , this edition was bottled in July 2020 at 50% ABV , without chill filtration and without added colorants. Maturation took place in a carefully selected combination of first-fill bourbon barrels, new American oak, French oak, and Vin Doux Naturel wine casks , creating that typical Waterford balance of power, fruit, and spice.
Flavor profile
The nose offers fresh green apple, citrus, malt, and floral notes, followed by vanilla and light wine influences. The palate is lively and taut: pure barley, pear, citrus peel, spicy oak, and a subtle sweetness from the VDN cask. The finish is dry, medium to long, with fresh acidity and a lingering spiciness.
