In Akashi, Japan’s top town for octopus, the Takosho Kin-Kusu company has been creating boiled octopus for over 100 years. This photo book, planned by the company, showcases Akashi octopus in all its detail.
The book captures the suction power of live octopuses, the unique movements of each tentacle, the complex muscle structure, and the color of their cells. It also shows the slimy foam that appears during salt rubbing, and how their bodies gradually firm up. Once boiled, the octopuses display erect suckers and taut skin. During the photoshoot, the octopuses revealed a wide range of “expressions,” providing endless fascination.
While creating this photo book, the photographer was struck by the emotional presence of octopuses—whether they seemed happy, irritated, or slightly lethargic. This reinforced the lesson that these are living creatures. By presenting their lives through photographs, the book helps readers imagine the reasons behind the texture, flavor, and aroma of octopus, enhancing appreciation and enjoyment.
